Legs Soup
Legs soup is a well known and well loved Yemenite style of soup. What’s special about it is that it’s seasoned with a curry like special mix of herbs and spices called hawayij. Different people have different recipes for this, but it’s basically a mixture of black pepper, cardamon, saffron or tumeric, clove, ginger, and bay leaf. You can usually find it at a middle eastern store or the ethnic foods section of your local market.
This soup is often served with Yeminite pancakes called lachuch. You can have it with any kind of bread you like though.
You will need:
- 5 chicken leg quarters
- 1 large onion
- 2 tablespoons olive oil
- 2 cloves of garlic
- 5 large to 15 small potatoes, peeled and cut into quarters or halves
- 2 tablespoons soup hawayij
- 1 heaping teaspoon gray salt
- 1/8 cup cider or white wine vinegar
- water
Instructions:
- Heat the olive oil in a large pot.
- Sear the chicken and sweat the onions together.
- Add the garlic, and stir for a few seconds.
- Then add the spices, and stir for a few more seconds.
- Add the salt and vinegar, potatoes, and enough water to cover it all.
- Cover and bring to a boil on high heat.
- When it is boiling well, turn the heat down to low, and allow to cook for an hour or more.
To serve, each person should get a leg quarter and the equivalent of a large potato along with some soup. Use any leftover liquid for other recipes.
Neo Kobe Pizza
Neo Kobe Pizza is basically pizza dipped or rather soaked in soup. The idea was born from the Snatcher series. You can get the recipe in the Select Button forums.
For those who’d rather avoid soy, you may want to try it with a soup made of a couple of chicken flavor Maggi cubes. These go well with the taste of pizza, and don’t totally override the taste of the tomato. In fact, many tomato soup recipes contain Maggi cubes.
The idea came from akashiyaki, a Japanese dish of batter coated octopus balls in soup. It’s said that a Japanese student accidentally dropped his pizza into some soup, and that because akashiyaki is good, maybe pizza in soup would be good too. So he ate it, and a trend was born.
On the other hand, it’s also said to be the invention of Jeremy Blaustein, the developer who did the English localazation of Snatcher.
People have been dipping bread, sandwiches, and even pizza in soup for a long time, but now there’s a name and a technique for it. Try it sometime, and see if you like it.
A nice way to get Neo Kobe Pizza without having to order a pizza is to bake a bowl of soup with puff pastry or “malawach” dough wrapped over the top. Sprinkle some cheese over the soup, and add whatever toppings you like on pizza. Then cover the bowl with the pastry, and bake on high in the toaster oven or about 400 degrees Farenheit in the regular oven for about 20 minutes or until the pastry turns golden brown.
Take it out of the oven with oven mits or a towel. Let it cool a little, and then use your spoon or chopsticks to mash the pastry down into the soup.
